  • 2 medium zucchinis, grated (about 2 cups)
    1 can (11 ounces) Green Giant® SteamCrisp® Niblets® Whole Kernel Sweet Corn No Salt, drained
    1 large egg
    ⅓ cup all-purpose flour
    ⅔ cup sharp cheddar cheese, grated
    ¼ teaspoon black pepper

    For Dill Yogurt Sauce:
    ⅓ cup Greek yogurt
    2 Tablespoons mayonnaise
    1 Tablespoon freshly chopped dill
    1 Tablespoon lemon juice
    ¼ teaspoon garlic powder
    ¼ teaspoon salt (optional)
    ¼ teaspoon black pepper

1 Preheat oven to 400ºF and line a large baking sheet with parchment paper. Stir together ingredients for yogurt dill dipping sauce in a bowl and refrigerate until serving.
2 Remove excess moisture from grated zucchini by placing it in the center of a clean kitchen towel and squeezing over the sink to release excess liquid. Transfer to a mixing bowl.
3 Add corn, egg, flour, cheese and pepper to mixing bowl. Stir well to combine, noting mixture should be moist.
4 Scoop ¼ cup mounds of mixture onto baking sheet. Press with the back of the measuring cup and form with hands into discs. Bake for 10 minutes. Gently flip with a spatula and bake 8-10 minutes longer, until golden brown and crisp.
5 Cool for 5 minutes on baking sheet. Serve warm with lemon dill yogurt sauce.
