  • For Chili
    1 Tablespoon olive oil
    1 small yellow onion, diced
    1 green pepper, diced
    1 Tablespoon chili powder
    2 teaspoons cumin
    1 can (15 ounces) diced tomatoes
    1 can (8 ounces) tomato paste
    ½ cup vegetable broth
    1 can (15 ounces) kidney beans, drained and rinsed
    1 can (15 ounces) Green Giant® Mixed Vegetables, drained
    1 jar (10 ounces) Green Giant® Whole Mushrooms, drained and halved
    Salt and pepper to taste

    For Serving
    Sour cream
    Shredded cheddar cheese
    Chopped green onion

STEPS

1 In large stovetop pot, heat oil over medium. Add onion and green pepper. Cook for 5 minutes, until vegetables begin to soften. Add chili powder, cumin, tomatoes, tomato paste, broth, beans and mixed vegetables. Bring to a boil and reduce heat to simmer. Simmer for 15 minutes.
2 Stir in mushrooms and kidney beans. Cook for 5 minutes longer. Season with salt and pepper.
3 Ladle into bowls and serve hot topped with sour cream, cheese and green onions.
