  • For maple butter:
    ½ cup butter, at room temperature
    2 Tablespoons pure maple syrup

    1 cup all-purpose flour
    1 cup yellow cornmeal
    2 Tablespoons sugar
    2 teaspoons baking powder
    1 cup buttermilk
    2 large eggs
    1 can (11 ounces) Green Giant® SteamCrisp® Super Sweet White Corn, drained

1 Use a hand mixer or whisk to beat together butter and maple syrup in a small mixing bowl. Set aside for serving.
2 In a large mixing bowl, whisk together flour, cornmeal, sugar, and baking powder. Add buttermilk and eggs. Whisk until just combined. Fold in corn.
3 Heat a griddle or large skillet over medium. Grease with butter or cooking oil. Add ¼ cup scoops of batter to hot skillet, making 4 cakes at a time and cooking for 2-3 minutes. Flip and cook 2-3 minutes longer. Repeat with remaining batter.
4 Serve warm with maple butter.
