  • For maple butter:
    ½ cup butter, at room temperature
    2 Tablespoons pure maple syrup

    1 cup all-purpose flour
    1 cup yellow cornmeal
    2 Tablespoon sugar
    2 teaspoons baking powder
    1 cup buttermilk
    2 large eggs
    1 can (11 ounces) Green Giant® SteamCrisp® Super Sweet White Corn, drained

STEPS

1 Use a hand mixer or whisk to beat together butter and maple syrup in a mixing bowl. Set aside for serving.
2 Whisk together flour, cornmeal, sugar, and baking powder. Add buttermilk and eggs. Whisk until just combined. Stir in corn until just combined.
3 Heat a griddle or large skillet over medium. Grease with butter or cooking oil. Add ¼ cup scoops of batter to hot skillet, making 4 cakes at a time and cooking for 2-3 minutes. Flip and cook 2-3 minutes longer. Repeat with remaining batter.
4 Serve warm with maple butter.

Keep the sweet corn Johnny cakes warm as you make other dishes or wait for guests to come over by placing them on a baking sheet in the oven at 200ºF. This will help them taste hot off the griddle, all while retaining their light, moist texture.
