Pozole is a traditional – and downright delightful – stew in Mexican cuisine made with pork and spicy chilis. There are many ways to make this dish, but our slow cooker pozole recipe is prepped in just 10 minutes with our convenient Whole Kernel Corn No Salt Added. This pork pozole recipe then simmers all day on its own, while you enjoy the warm, fragrant spices wafting in your kitchen and around your home.

Lists of ingredients:

  • 2 tablespoons avocado oil 
    2 pounds boneless pork shoulder, pork tenderloin or pork butt, cut into large pieces
    1 small white onion, chopped
    2 teaspoons ground cumin
    1 teaspoon dried oregano 
    1 jar (16 ounces) tomatillo salsa
    1 can (7 ounces) green chiles
    8 cups chicken broth 
    1 can (15.25 ounces) Green Giant® Whole Kernel Corn No Salt Added, drained
    4 ounces corn tortilla chips

    For Serving:
    Chopped avocado
    Chopped cilantro 
    Lime wedges, for juice

STEPS

1 Heat oil over medium heat in a large skillet. Add pork to hot skillet and brown on all sides for 3 minutes. 
2 Transfer pork to slow cooker. Add onion, cumin, oregano, salsa, chiles, broth, corn and chips. Stir. Cover with lid and cook on low for 6-8 hours, until pork is tender.
3 Remove pork and place on a cutting board. Shred with two forks. Return to slow cooker and stir.
4 Ladle into bowls and top with avocado and cilantro. Squeeze lime wedges over pozole and discard.

TIPS & TRICKS

This slow cooker pork pozole recipe can be a complete meal on its own, but also goes great with tortilla chips, warm corn tortillas and extra vegetables or a salad.
