FULL RECIPE

Cook Time: 21 minutes

Green Giant product(s) used: Green Giant® Whole Kernel Sweet Corn

Lists of ingredients:

  • 1 Tablespoon olive oil
    2 Tablespoons butter, divided
1 package (16 ounces) prepared potato gnocchi
    6 ounces turkey kielbasa, sliced
1 can (15.25 ounces) Green Giant® Whole Kernel Sweet Corn, drained
    2 cups chopped kale
    ½ teaspoon salt
    ¼ teaspoon cracked black pepper
    ½ cup shredded mozzarella cheese

Steps

STEPS

1 Heat oil and 1 tablespoon of butter over medium in a large oven-safe skillet. Add gnocchi and cook for 10 minutes, stirring regularly.
2 Melt remaining butter in skillet. Add kielbasa and stir to incorporate. Continue to cook for 5 minutes longer, until gnocchi and kielbasa are lightly browned. Add corn, kale, salt and pepper to skillet. Stir to combine. Cook 2 minutes longer.
3 Turn oven to broil on high. Top skillet with shredded mozzarella and place in oven about 6-inches under broiler. Broil for 3-4 minutes, until cheese is melted.

TIPS & TRICKS

As you’re making skillet gnocchi, avoid overcooking the dumplings so they don’t become tough. When adding turkey kielbasa for this recipe, or any pan-fried dish, slice the sausage diagonally in ½ to 1-inch cuts to elevate the presentation.

While we’ll always love topping pan-fried gnocchi with mozzarella, it can also be fun to try adding shredded asiago, provolone or Monterey jack cheese for a tasty twist. IF you have leftovers, you can refrigerate skillet gnocchi for up to 2 days.
