Lists of ingredients:

  • 1 ½ cups almond flour
    ¼ cup plain or vanilla protein powder
    1 teaspoon pumpkin pie spice + extra for garnishing
    ¼ teaspoon salt
    ⅔ cup unsweetened almond butter
    4 Tablespoons Green Giant® 100% Pure Pumpkin
    ¼ cup honey
    1 teaspoon vanilla extract
    ⅓ cup pumpkin seeds
    1 package (12 ounces) white chocolate chips

1 In a medium bowl, whisk together almond flour, protein powder, pumpkin pie spice and salt. Set aside.
2 In a large bowl, combine almond butter, pumpkin, honey and vanilla until smooth. Add dry ingredients to wet ingredients and stir together until dough forms. Fold in the pumpkin seeds.
3 Measure out 2 tablespoon portions and roll into balls. Place on tray lined with parchment paper. Repeat to form 16 balls.
4 In a micowave-safe bowl, add white chocolate chips. Heat 15 seconds, stir, heat 15 seconds again and stir again. Repeat until melted. Drizzle across each ball and top with pumpkin spice.
5 Store in an airtight container in the fridge.
