Heat Belgian waffle maker according to directions and grease with non-stick spray.

In a large mixing bowl, add ingredients for waffle batter and whisk until smooth.

Once waffle maker is heated, add 3/4 cup of batter to the center and close lid. Cook for 5-6 minutes. Transfer cooked waffles to a parchment paper-lined baking sheet and place in oven at 200ºF to keep warm. Repeat with remaining batter.

Serve warm waffles topped with butter, maple syrup and chopped pecans.
Tips & Tricks
Any type of flour can be used in place of all-purpose flour in this pumpkin belgian waffle recipe, such as almond, whole wheat or gluten-free flour. If the flour you change to is more course, add more milk as needed to result in a smooth, wet batter.
And remember, pumpkin waffles aren’t just for fall. Plain cinnamon or nutmeg can be used in place of pumpkin pie spice.
