Lists of ingredients:

  • 3 cups rolled oats
    1 cup whole wheat flour
    1 cup coconut sugar or raw cane sugar
    ½ cup unflavored protein powder
    1 teaspoon cinnamon
    1 teaspoon baking powder
    ½ teaspoon salt
    1 can (29 ounces) Green Giant® Family Size 100% Pure Pumpkin
    4 large eggs
    2 teaspoons vanilla extract
    1 cup chopped pecans

STEPS

1 Preheat oven to 350ºF. Line a 9x13 baking dish with parchment paper. 
2 In a mixing bowl, whisk together oats, flour, sugar, protein powder, cinnamon, baking powder and salt.
3 In a separate mixing bowl, whisk together pumpkin, eggs and vanilla. 
4 Stir wet ingredients into dry until just combined. Fold in chopped pecans.
5 Spread evenly in baking pan and bake for 50-55 minutes. Cool completely in pan before slicing into bars.

If you’re in the middle of “Pumpkin Spice Season” and craving that flavor, swap the cinnamon for 2 teaspoons of pumpkin pie spice while making your next batch of these pumpkin bars. Enjoy with friends, family or your favorite latte.
