Lists of ingredients:

  • 1 ripe banana
    1 can (15 ounces) Green Giant® 100% Pure Pumpkin
    3 large eggs
    1 ½ cups milk
    2 teaspoons vanilla extract
    2 cups flour
    2 teaspoons baking powder
    1 teaspoon baking soda
    2 teaspoons cinnamon
    ½ teaspoon salt
    1 cup mini chocolate chips (optional)

1 In mixing bowl, add banana and mash. Add pumpkin, eggs, milk, and vanilla. Whisk together.
2 Add flour, baking powder, baking soda, cinnamon, and salt. Stir until just combined. (batter will be thick) Fold in chocolate chips, if desired.
3 Heat a greased skillet or griddle over medium. Scoop about ⅓ cup of batter per pancake. Cook 2–3 minutes per side, until golden and set.
4 Serve warm with maple syrup.

TIPS & TRICKS

This batter can also be used to make waffles. Just add to a greased, heated waffle iron and cook according to manufacturer’s directions.
