What is Nicoise salad? The salad originated in Nice, France, and is known for being artfully arranged with tomatoes, hard-boiled eggs, olives and tuna. Our quick Nicoise salad recipe only takes 10 minutes to make, and using our Three Bean Salad adds extra protein and nutrients for a healthy lunch or dinner any day of the year.

Lists of ingredients:

  • 1 can (15 ounce) Green Giant Three Bean Salad, liquid drained and reserved
    ¼ cup mayonnaise
    2 Tablespoons olive oil
    1 teaspoon Dijon mustard
    1 small head butter lettuce, leaves separated
    ¼ pound halved golden baby potatoes, cooked and cooled
    1 can (5 ounces) tuna, drained
    1 cup grape tomatoes, halved
    2 hard-boiled eggs, quartered
    ⅓ cup pitted kalamata olives

STEPS

1 Whisk together reserved liquid from three bean salad, mayonnaise, olive oil and mustard in a small bowl. Set aside. 
2 On a serving platter, arrange lettuce leaves in a single layer. On top add three bean salad, potatoes, tuna, tomatoes, eggs, and olives. Top with dressing and enjoy.

TIPS & TRICKS
