Miso Mushroom Noodles

Lists of ingredients:

  • 8 ounces rice noodles
    ½ cup chicken or vegetable stock
    1 Tablespoon miso paste
    1 Tablespoon toasted sesame oil
    1 Tablespoon less sodium soy sauce
    ½ teaspoon red pepper flakes (optional)
    1 Tablespoon olive oil
    1 clove garlic, minced
    1 jar (10 ounces) Green Giant® Whole Mushrooms, drained and halved
    1 teaspoon toasted sesame seeds for serving

STEPS

1 Cook noodles according to package directions.
2 While noodles cook, whisk together broth, miso paste, sesame oil, soy sauce and red pepper flakes in a small bowl.
3 Heat oil over medium in a large skillet. Add garlic and cook for 1 minute. Add mushrooms and cook for 3 minutes longer, stirring regularly.
4 Add cooked noodles to skillet. Pour sauce over noodles and use tongs to coat. Simmer for 2 minutes. Top with toasted sesame seeds and enjoy.
