Lists of ingredients:

  • 1 Tablespoon unsalted butter
    2 cloves garlic, chopped
    2 cans (15.25 ounces each) Green Giant® Whole Kernel Sweet Corn Low Sodium, drained and water reserved (reserve ½ cup of corn kernels for serving)
    3 cups low sodium chicken broth
    ¼ cup chopped green onions + extra for serving
    ¼ teaspoon black pepper
    1 Tablespoon cornstarch

STEPS

1 Melt butter over low heat in a large pot. Add garlic and sauté for 1 minute, until fragrant and lightly browned.
2 Stir in drained corn, broth, green onions and black pepper. Bring to a boil, then reduce heat. Simmer for 10 minutes.
3 Use an immersion blender to blend until smooth, or transfer to a stand-up blender and puree. Return soup to pot over low heat.
4 Stir together reserved water from canned corn and cornstarch until dissolved. Stir into soup. Simmer for 5 minutes longer, or until thickened.
5 Serve hot, topped with additional green onions and reserved corn.

TIPS & TRICKS

If using a stand-up blender to puree this chicken broth corn soup, start will small pulses and lift lid in between action times to allow steam to escape.
