  • 8 ounces orzo pasta
    1 can (14 ounces) quartered artichoke hearts, drained and halved
    1 cup halved grape tomatoes
    4 ounces hard salami, chopped into bite-sized pieces
    ⅓ cup thinly sliced red onion
    1 can (10.5 ounces) Green Giant® Cut Asparagus, drained
    2 ounces crumbled feta cheese

    For dressing:
    ⅓ cup olive oil
    3 Tablespoons lemon juice
    1 teaspoon dijon mustard
    ½ teaspoon salt
    ½ teaspoon dried oregano
    ¼ teaspoon minced garlic
    ¼ teaspoon cracked black pepper

STEPS

1 Cook orzo according to package directions. While pasta cooks, combine ingredients for dressing in a small mason jar and shake well to combine.
2 Drain pasta and rinse under cool water. In a mixing bowl, add orzo, artichokes, tomatoes, salami, onion, and asparagus. Pour in dressing and stir gently to combine.
3 Serve topped with crumbled feta cheese.
