Lists of ingredients:

  • 4 ounces halloumi cheese, sliced into ¼-inch thick slices
    1 can (14.5 ounces) Green Giant® Cut Italian Beans, drained
    1 cup peeled and thinly sliced cucumber
    ½ cup halved cherry tomatoes
    1 medium shallot, thinly sliced
    ¼ cup chopped kalamata olives
    2 Tablespoons capers

    For dressing:
    ¼ cup olive oil
    2 Tablespoons fresh lemon juice
    4-5 fresh basil leaves
    1 clove garlic
    ¼ teaspoon salt
    ¼ teaspoon black pepper

STEPS

1 Heat a grill pan over medium heat for 2 minutes and lightly grease with cooking oil. Once pan is hot, add cheese and grill for 2 minutes on each side. Set aside on a plate.
2 Combine ingredients for dressing in a food processor or blender and blend until smooth.
3 In a mixing bowl, combine beans, cucumber, tomatoes, shallot, olives, and capers. Drizzle with dressing and stir to coat.
4 Transfer to a serving plate and top with slices of grilled halloumi.
