Lists of ingredients:

  • 1 Tablespoon avocado oil
    1 can (7 ounces) Green Giant® SteamCrisp® White Shoepeg Corn, drained 
    1 small red onion, minced
    1 medium avocado, diced
    ½ teaspoon salt
    2 Tablespoons chopped cilantro 
    1 lime, juiced
    1 jalapeño pepper, seeded and minced
    Tortilla chips for serving 

STEPS

1 Heat avocado oil over medium-high heat in a skillet for 3 minutes. Add corn to hot skillet and cook 4-5 minutes, stirring occasionally, until lightly charred. Turn heat off and cool corn to room temperature.
2 Add corn, red onion, avocado, salt, cilantro, lime juice and jalapeño to a bowl. Stir gently to combine. Serve with tortilla chips.
