Crispy Corn Fritters

Lists of ingredients:

  • For Spicy Honey Butter:
    ⅓ cup unsalted butter, at room temperature
    1 Tablespoon honey
    ¼ teaspoon salt
    Pinch of cayenne pepper

    For Corn Fritters:
    1 cup all-purpose flour
    1 teaspoon baking powder
    2 teaspoon sugar
    1 large egg, beaten
    2/3 cup whole milk
    1 Tablespoon minced chives
    1 Tablespoon melted unsalted butter
    1 can (11 ounces) Green Giant® Steam Crisp® Niblets ® Corn, drained
    2 cups vegetable oil for stove-top frying

STEPS

1 Add ingredients for honey butter to a mixing bowl and use a hand mixer to beat until fluffy. Set aside at room temperature.
2 Whisk together flour, baking powder, and sugar in a mixing bowl. Add egg, milk, chives and melted butter. Whisk to combine. Fold in corn.
3 STOVETOP DIRECTIONS: Heat oil over medium heat to 365ºF in a deep skillet or Dutch oven. Carefully drop spoonfuls of batter into oil and fry for 1 ½ - 2 minutes on each side, until evenly golden brown. Remove fritters from oil with a slotted spoon and place on a paper towel-lined plate.
4 AIR FRYER DIRECTIONS: Drop spoonfuls of batter onto air fryer tray/basket and cook 5 minutes at 400ºF, or until golden-brown and crispy.
5 Serve corn fritters hot with spicy honey butter for dipping.
