Lists of ingredients:

  • 1 cup yellow cornmeal
    1 cup all-purpose flour
    2 teaspoon baking powder
    2 Tablespoons sugar
    ¼ cup unsalted butter, melted
    2 large eggs, beaten
    1 ¼ cup milk
    1 can (11 ounces) Green Giant® Steam Crisp® Extra Sweet Niblets® Corn, drained
    Non-stick cooking spray
    Butter and/or maple syrup, for serving

STEPS

1 In a mixing bowl, whisk together cornmeal, flour, baking powder, and sugar. Add melted butter, egg, and milk. Whisk to combine. Fold in corn.
2 Spray Belgian waffle iron with non-stick spray and heat according to directions. Once iron is hot, scoop ⅔ cup of the batter on the center of waffle iron and close lid. Cook for 4-5 minutes.
3 Repeat with remaining batter. Serve corn waffles hot with butter and maple syrup if desired.

TIPS & TRICKS

When making waffles, don’t overmix. Stir the wet ingredients into the dry ones just until batter is combined. The more you mix, the tougher, chewier the texture will be.

If you are making multiple batches, or not serving right away, transfer cooked waffles to a baking sheet and place in a 250ºF oven to keep warm.
