Lists of ingredients:

  • 1 cup yellow cornmeal
    1 cup all-purpose flour
    2 teaspoon baking powder
    2 Tablespoon sugar
    ½ teaspoon salt
    ¼ cup unsalted butter, melted
    2 large eggs, beaten
    1 ¼ cup milk
    1 can (11 ounces) Green Giant® Steam Crisp® Extra Sweet Niblets® Corn, drained
    Cooking oil spray for greasing
    Butter and/or maple syrup, for serving

STEPS

1 Whisk together cornmeal, flour, baking powder, sugar, and salt in a medium mixing bowl. Add melted butter, egg, and milk. Whisk to combine. Fold in corn.
2 Spray Belgian waffle iron with cooking oil and heat according to manufacturer's directions. Once iron is hot, scoop ⅔ cup of the batter on the center of waffle iron and close lid. Cook for 4-5 minutes. Transfer cooked waffles to a baking sheet and place in a 250ºF oven to keep warm.
3 Repeat with remaining batter. Serve corn waffles hot with butter and maple syrup if desired.

TIPS & TRICKS

When making waffles, don’t overmix the batter. Stir the wet ingredients into the dry ones just until everything is combined. The more you mix, the more you activate the gluten in the flour, which can result in a tougher, chewier texture.

Resist the temptation to open the waffle iron during cooking. Wait for the doneness indicator or, if your waffle iron doesn’t have one, wait till you no longer see steam coming from the iron and your waffle smells toasty and nutty.
