  • 2 Tablespoons butter
    1 pound boneless, skinless chicken breast or thighs, cut into bite-sized pieces
    1 small onion, diced
    2 celery stalks, chopped
    1 large Yukon gold potato, diced
    3 cups low sodium chicken broth
    ½ tsp black pepper
    1 tsp dried thyme
    1 cup whole milk
    3 Tablespoons all-purpose flour
    1 can (15 ounces) Green Giant® Sweet Peas, Low Sodium, drained
    1 can (15 ounces) Green Giant® Sliced Carrots, drained

STEPS

1 In a large pot or Dutch oven, heat butter over medium. Add chicken and cook until lightly browned, about 8 minutes, stirring regularly. Remove chicken and set aside.
2 In the same pot, add onions, celery and potatoes. Sauté for 3 minutes.
3 Stir in broth, pepper, and thyme. Return chicken to pot. Bring to a boil. Reduce heat to low. Simmer uncovered for 15 minutes.
4 Whisk together milk and flour in a small bowl. Stir into stew. Add peas and carrots. Simmer 4 minutes longer, until thickened. Ladle into bowls.
