Lists of ingredients:

  • 1 Tablespoon butter
    1 shallot, peeled and chopped
    1 clove garlic, minced
    1 can (10.5 ounces) Green Giant® Cut Asparagus
    ¼ cup chicken or vegetable broth
    ½ cup heavy cream
    Salt and pepper to taste
    ½ cup croutons for topping
    2 tablespoons shelled pumpkin seeds for topping

STEPS

1 Heat butter over medium in a medium saucepan. Add shallots and garlic. Sauté for 5 minutes, stirring regularly.
2 Transfer sautéed shallots and garlic to a blender. Add asparagus with canning water, and broth. Blend until smooth.
3 Transfer soup back to saucepan and heat over medium-low until simmering, 2-3 minutes. Stir in heavy cream. Simmer 1 minute longer. Season with salt and pepper. Ladle into bowls and top with croutons and pumpkin seeds.

TIPS & TRICKS

Creamy Asparagus Soup is also delicious served cold on a warm day.

To freeze this soup, prepare it through step 2, then pour into a freezer-safe container and freeze. To finish the soup, let it thaw overnight in the fridge, or defrost it in the microwave, and then proceed with step 3.

Other garnishing options include: a spoonful of lightly whipped heavy cream, shelled sunflower seeds, a sprinkling of smoked paprika, bacon bits, or crispy onion strings.
