Try a fun twist on your traditional taco night by making this crispy air fryer taquitos recipe. “Taquito” means “little taco” in Spanish, and the mini golden brown rollups are filled with seasoned beef, cream cheese, shredded cheese and SteamCrisp® Niblets Whole Kernel Sweet Corn for a little extra crunch that goes a long way. Since homemade taquitos are smaller than classic tacos, they are often served as a snack or appetizer, but you can certainly enjoy them for dinner as well.

Lists of ingredients:

  • 1 pound lean ground beef 
    1 package taco seasoning 
    1 can (7 ounces) Green Giant® SteamCrisp® Niblets Whole Kernel Sweet Corn, drained
    4 ounces cream cheese, softened
    1 cup shredded Monterey jack cheese
    12 small corn tortillas 
    Olive oil cooking spray 
    Salsa and sour cream for serving

STEPS

1 Heat ground beef over medium heat in a skillet. Use a spatula to break up beef into small pieces. Cook 5 minutes. Stir in taco seasoning and corn. Cook 4-5 minutes longer, stirring regularly. 
2 Turn off heat. Stir in cream cheese and shredded cheese. 
3 Lay one corn tortilla on a flat surface. Add 2-3 tablespoons of beef mixture to the center. Roll tightly and place seam side down on a baking sheet. Repeat with remaining tortillas and mixture.
4 Preheat air fryer to 390ºF. Spray basket of air fryer with cooking spray and place 6 taquitos in basket seam side down with space in between. Spray tops of taquitos with cooking spray. Cook for 5 minutes. Flip taquitos and cook for 2 minutes longer. Repeat with remaining taquitos.
5 Serve with salsa and sour cream for dipping.

TIPS & TRICKS

Don’t have an air fryer at home? You can also make this recipe in the oven following these steps, and you still get air fryer taquito-worthy results:

1. Turn on your oven’s convection setting. Line all taquitos on a baking sheet and cook at 400°F for 10 minutes.
2. Try using a perforated pan, or a pan with holes on the base and sides, to increase airflow under and around the taquitos.
3. Lightly spray your taquitos with cooking oil and do give them plenty of space to crisp up.
