  • For Vinaigrette
    ¼ cup olive oil
    2 Tablespoon red wine vinegar
    1 Tablespoon honey
    1 teaspoon dijon mustard
    ½ teaspoon minced garlic
    ¼ teaspoon salt
    Pinch of black pepper

    2 Tablespoon olive oil
    3 cups cubed crusty bread
    1 can (11 ounces) Green Giant® Steam Crisp° Super Sweet White Corn, drained
    2 medium tomatoes, quartered
    1 cup English cucumber, lightly peeled, seeded, and sliced
    ½ cup fresh basil leaves

STEPS

1 Whisk together ingredients for vinaigrette in a small bowl. Set aside.
2 Heat oil in a large skillet over medium. Add bread and stir gently to coat. Cook 8-10 minutes, stirring occasionally until bread is toasted and crisp around edges. Transfer to a plate to cool.
3 Combine toasted bread, corn, tomatoes, and cucumber in a large bowl. Drizzle with vinaigrette and toss to coat. Transfer to a serving bowl or platter and top with fresh basil leaves.
4 Air Fryer Directions (for toasted bread)  Add bread and olive oil to a mixing bowl and stir to coat. Pour bread into air fryer basket. Cook at 380ºF for 3 minutes. Shake basket to rotate bread and cook for 2-3 minutes longer, until bread is toasted and crisp around edges. Transfer to a plate to cool

TIPS & TRICKS

For a heartier main-dish version, fold in a can of tuna or salmon, chunks of grilled or rotisserie chicken, or cubes of fresh mozzarella.

Can you make panzanella ahead of time?
Panzanella is a good choice for entertaining because you can make it in advance—or if you like your Panzanella crispy, make the dressing and croutons and prepare the vegetables ahead of time but keep them all separate.
