Primavera is the Italian word for “springtime,” but with a can of our Mixed Vegetables in your pantry, you can enjoy this creamy pasta primavera recipe all year long. Our product includes carrots, potatoes, celery, corn, green beans, sweet peas and lima beans, so you get delicious flavor, bright color and the perfect vegetable texture for a pasta sauce without all the shopping and chopping. Lemon zest, lemon juice and parmesan round out the flavors, and cherry tomatoes add a bright pop of acidity to balance the richness of the sauce.

  • 8 ounces fusilli or rotini pasta
    1 Tablespoon butter or olive oil
    1 teaspoon minced garlic
    1 cup chicken or vegetable broth
    2 teaspoons cornstarch
    ½ cup heavy cream
    1 Tablespoon lemon zest
    2 Tablespoons fresh lemon juice
    ½ cup freshly grated parmesan cheese
    1 can (15 ounce) Green Giant® Mixed Vegetables, drained
    1 cup halved cherry tomatoes
    ¼ cup chopped fresh basil

STEPS

1 Cook pasta according to package directions. While pasta cooks, heat butter over medium in a large skillet. Add garlic and sauté for 1 minute.
2 Whisk in broth, cornstarch and heavy cream. Reduce heat to medium-low and stir in lemon zest and lemon juice. Bring to a simmer. Stir in parmesan cheese until melted. Simmer sauce for 4-5 minutes, until thickened. Season sauce with salt and pepper to taste.
3 Stir in vegetables and cooked pasta. Turn heat off and stir in cherry tomatoes. Top with fresh basil when serving.

TIPS & TRICKS

The cream sauce in this recipe is a versatile base that goes well with all kinds of vegetables. You can substitute other Green Giant® canned products such as green beans, sweet peas, or asparagus.

For added color, use a mix of red, gold and orange cherry tomatoes.

Serve this pasta with a green salad on the side and crusty bread to mop up every bit of the sauce.
