Lists of ingredients:

  • 2 Tablespoons olive oil, divided, plus extra for greasing baking dish
    ½ cup low sodium chicken or vegetable broth
    ½ cup low-fat milk
    ½ cup low-fat Greek yogurt
    ½ cup sliced yellow onion
    4 ounces sliced cremini mushrooms
    2 teaspoons minced garlic
    1 teaspoon dried thyme
    ¼ teaspoon black pepper
    2 Tablespoons all-purpose flour
    2 cans (14.5 ounces each) Green Giant® Low Sodium Cut Green Beans, drained

    For Topping
    ½ cup panko breadcrumbs
    1 Tablespoon olive oil

STEPS

1 Preheat oven to 400ºF and lightly grease a 1-2-quart casserole dish with oil. Whisk together broth, milk, and yogurt in a small bowl. Set aside.
2 Heat 1 tablespoon of oil in a large skillet over medium. Add onions and mushrooms. Sauté 5 minutes. Stir in garlic, thyme and black pepper. Cook 1 minute longer.
3 Add remaining tablespoon of oil to skillet. Sprinkle flour over vegetables and stir. Cook 1 minute.
4 Gradually whisk in the milk mixture. Heat until simmering, whisking regularly until thickened, about 3 minutes.
5 Turn heat off and stir in green beans to coat. Transfer to casserole dish.
6 Stir together panko breadcrumbs and olive oil in a small bowl. Sprinkle over green bean casserole and bake 10-12 minutes, until breadcrumbs are golden brown.

TIPS & TRICKS

This casserole can be prepared up to 3 days before serving. Pour the green bean mixture into the casserole dish, but don’t top with the panko. Cover with plastic wrap and store in the fridge. An hour before serving time, take the casserole out of the refrigerator and allow it to come to room temperature. Top with the panko–olive oil mixture and bake as directed.
