Lists of ingredients:

  • For Caesar Dressing
    2 Tablespoons olive oil
    2 Tablespoons mayonnaise
    2 Tablespoons lemon juice
    1 anchovy filet, chopped
    1 teaspoon Dijon mustard
    1 garlic clove, chopped
    Dash of Worcestershire sauce
    Pinch of black pepper

    Note: Store bought caesar dressing can also be used.

    For Salad
    4 cups shredded kale
    1 cup cooked tricolor quinoa, chilled
    1 cup halved yellow and red cherry or grape tomatoes
    1 can (11 ounce) Green Giant® Steam Crisp ® Yellow and White Corn, drained
    ⅓ cup grated Parmesan cheese

STEPS

1 Combine ingredients for Caesar dressing in a wide- mouth mason jar and use an immersion blender to blend until smooth and creamy. Set aside. Ingredients can also be added to a small blender and blended until smooth.
2 Add kale to a large bowl and massage with clean hands to tenderize. Add quinoa, tomatoes, corn and dressing. Stir gently to coat. Transfer to a serving bowl and top with parmesan cheese.
