  • 1 can (15 ounces) Green Giant® 100% Pure Pumpkin
    2 large eggs
    1/3 cup vegetable oil
    ½ cup brown sugar, packed
    ½ cup granulated sugar
    1 teaspoon vanilla extract
    2 cups all-purpose flour
    1 teaspoon baking powder
    ½ teaspoon baking soda
    ½ teaspoon salt
    1 teaspoon cinnamon
    1 cup semi-sweet chocolate chips

1 Preheat oven to 350°F. Line a 12-cup muffin pan with paper liners.
2 In a large bowl, whisk together pumpkin, eggs, oil, brown sugar, granulated sugar and vanilla until smooth.
3 In a separate bowl, combine flour, baking soda, baking powder, salt and cinnamon.
4 Gradually stir dry ingredients into the wet mixture until combined. Fold in most of the chocolate chips, reserving about ¼ cup for topping.
5 Scoop the batter evenly into muffin cups, filling each about ¾ full. Top with reserved chocolate chips.
6 Bake 22-26 minutes, or until a toothpick inserted into the center comes out clean.
7 Cool your pumpkin muffins with chocolate chips in the pan for 5 minutes, then transfer to a wire rack to cool completely.
