These fluffy, decadent waffles are made with Green Giant 100% Pure Pumpkin for a wholesome, nutritious boost of flavor and rich color. Topping your Belgian pumpkin waffles with butter and maple syrup is a given, but adding chopped pecans will give this brunch treat the perfect finishing crunch.

Green Giant product(s) used: Green Giant® 100% Pure Pumpkin

Lists of ingredients:

  • 1 can (15 ounces) Green Giant® 100% Pure Pumpkin
    2 large eggs
    1 cup whole milk
    2 cups all-purpose flour
    1 teaspoon pumpkin pie spice
    ½ teaspoon baking powder
    ¼ teaspoon salt
    For Serving:
    Butter
    Maple syrup
    Chopped pecans

STEPS

1 Heat Belgian waffle maker according to directions and grease with non-stick spray. 
2 In a large mixing bowl, add ingredients for waffle batter and whisk until smooth. 
3 Once waffle maker is heated, add 3/4 cup of batter to the center and close lid. Cook for 5-6 minutes. Transfer cooked waffles to a parchment paper-lined baking sheet and place in oven at 200ºF to keep warm. Repeat with remaining batter.
4 Serve warm waffles topped with butter, maple syrup and chopped pecans.

TIPS & TRICKS

Any type of flour can be used in place of all-purpose flour in this pumpkin belgian waffle recipe, such as almond, whole wheat or gluten-free flour. If the flour you change to is more course, add more milk as needed to result in a smooth, wet batter.
And remember, pumpkin waffles aren’t just for fall. Plain cinnamon or nutmeg can be used in place of pumpkin pie spice.
