This mosaic meatloaf is a colorful and delicious take on a classic home-cooked meal. Our meatloaf recipe combines beef and pork with Green Giant Mixed Vegetables – a medley of carrots, potatoes, celery, corn, green beans, peas, and lima beans. That’s seven vegetables with no washing, dicing, and cooking required! To top it all off, our glaze is made with maple syrup, ketchup and Dijon mustard for a sweet finishing touch to your meatloaf with vegetables.

Lists of ingredients:

  • For Meatloaf: 
    1 cup breadcrumbs 
    ⅓ cup whole milk 
    1 pound 97% lean ground beef
    1 pound ground pork 
    1 can (15 ounces) Green Giant® Mixed Vegetables, drained
    2 large eggs
    2 Tablespoons Italian seasoning 
    ½ teaspoon garlic powder
    1 teaspoon salt
    ½ teaspoon black pepper

    For Glaze:
    ¼ cup ketchup
    1 Tablespoon tomato paste
    1 Tablespoon pure maple syrup 
    1 teaspoon Dijon mustard

STEPS

1 Preheat oven to 350ºF. Line a baking sheet with parchment paper that overlaps on the sides. 
2 In a large mixing bowl, combine breadcrumbs and milk. Soak for 3 minutes. Add remaining ingredients for meatloaf and mix thoroughly.
3 Transfer to prepared pan and shape with hands into a long loaf. Bake for 1 hour 10 minutes. 
4 While meatloaf bakes, stir together ketchup, tomato paste, maple syrup and mustard in a small bowl. After it cooks for 50 minutes, brush meatloaf with glaze and bake 10 minutes longer, or until internal temperature reaches 160ºF. Cool at room temperature for 10 minutes before slicing.
