We love this tzatziki potato salad because it offers so much flexibility – and it’s fast! No matter whether you use a store-bought tzatziki sauce or make your own, this recipe is ready in 10 minutes or less. Just combine two cans of our Diced Potatoes with a premade or homemade tzatziki sauce, then refrigerate the salad and top it with fresh dill before serving. The cool, creamy tzatziki sauce pairs perfectly with our mildly sweet potatoes, and this deli-style Greek potato salad is a popular option for gatherings or as an easy weeknight side dish.

Lists of ingredients:

  • 2 cans (15 ounces each) Green Giant® Diced Potatoes, drained
    1 cup store-bought tzatziki sauce or homemade

    For homemade tzatziki sauce:
    ½ cup Greek yogurt
    ¼ cup sour cream
    ¼ cup finely chopped cucumber, lightly peeled
    2 Tablespoons fresh chopped dill, plus extra for serving
    ½ teaspoon minced garlic
    ½ teaspoon salt
    ¼ teaspoon black pepper

STEPS

1 If using homemade tzatziki sauce: Stir together ingredients in a mixing bowl until well combined.
2 In a mixing bowl, stir together potatoes and tzatziki sauce until well combined. Refrigerate until serving.
3 Serve chilled topped with fresh dill.

TIPS & TRICKS

If you’re making homemade tzatziki sauce, squeeze your chopped cucumber in a colander over the sink to let out any excess moisture. This will help keep the sauce from getting too watery.

Store the tzatziki potato salad in an airtight container in the fridge for up to 4 days.
