  • 4 Tablespoons butter
    ½ cup sweet yellow onion, chopped
    1 cup chopped celery
    ¼ cup all-purpose flour
    1 cup chicken stock
    1 cup whole milk
    ½ teaspoon salt
    ½ teaspoon black pepper
    1 teaspoon dried thyme
    1 can (15 ounces) Green Giant® Mixed Vegetables, drained
    1 rotisserie chicken, meat removed and shredded (or 1 pound chicken breast, cooked and shredded)
    1 tube (16.3 ounces) refrigerated biscuits

STEPS

1 Preheat oven to 400ºF.
2 Melt butter over medium in a large skillet. Add onion; and celery sauté 5 minutes. Sprinkle flour over onions and stir to coat. Cook 1 minute longer.
3 Gradually stir in chicken stock. Stir in milk, salt, pepper and thyme. Continue to heat until just boiling. Reduce heat to low. Simmer for 2 minutes longer, until the sauce is thickened.
4 Stir in mixed vegetables and shredded chicken.
5 Pour into a 2-quart casserole dish. Arrange biscuit circles on top of pot pie.
6 Pour into a 2-quart casserole dish. Arrange biscuit circles on top of pot pie.
7 Bake for 18-22 minutes, until biscuits are golden brown.
