Lists of ingredients:

  • 1 Tablespoon butter
    ½ cup chopped green onion
    1 can (29 ounces) Green Giant® Family Size Sweet Peas, drained with ¼ cup of peas reserved
    1 medium avocado, peeled/pitted/diced
    ½ cup buttermilk
    ½ cup vegetable broth
    1 cup baby spinach
    4 fresh mint leaves
    ½ teaspoon salt
    ¼ teaspoon black pepper

    For serving:
    ½ cup sour cream
    2 Tablespoons buttermilk
    Fresh mint
    ¼ cup reserved peas

STEPS

1 Melt butter in a skillet over medium and add green onions. Sauté for 3-5 minutes, until tender.
2 In a blender, add cooked green onions, peas, avocado, buttermilk, broth, spinach, mint, salt, and pepper. Blend until smooth. Chill soup for 30 minutes.
3 In a small bowl, stir together sour cream and buttermilk until smooth. Divide soup between 6 serving bowls. Drizzle with sour cream and top with fresh mint and reserved peas.

TIPS & TRICKS

Part of what makes our chilled green pea soup so creamy is that this recipe calls for avocado. So, make sure your avocado is perfectly ripe. A ripe avocado should be soft and dark green or almost black, and the stem easy to remove.
